BLT Brunch

This weekend was my birthday! And for my birthday we had brunch in the park. Everything I have always wanted! There were lawn games, a bloody mary making station, mimosas and the best idea ever: A BLT bar. It was delightful, every part of it. Nothing melts my heart more than a BLTARS: Bacon, Lettuce, Tomato, Avocado, Red Pepper, Schnitzel... I'm sure you feel the same.

This is roasted red peppers and roasted butternut squash. Butternut squash! Try it!
it gets so soft and earthy and tastes so great with a bite of crispy bacon
Pork Schnitzel. Who would have thought. Brett found this recipe in last months issue of Esquire. It makes your sandwich such a manly BLT. I'll post this recipe later this week.

These eggs were made in a whoopee pie tin- such a smart idea, right? My friend Katie put most everything together for my birthday brunch, and this was one of many of her brilliant ideas. Spray a whoopee pie tin with cooking spray and crack the eggs into the pan. Cook in the oven. After a few minutes just pop them out with a fork! the perfect shape for a sandwich

This could have been my favorite part of it all. The condiments. Katie made a lemon garlic aioli, a tomato jam, an olive tapenade, and a siracha aioli.  Such an easy way to make a sandwich feel fancy and special. The tomato jam was my favorite. It was the perfect combination of savory and sweet.

A mango orange mimosa to join the bloody mary's. So good. So sweet. Such a good friend to the bloody mary. Katie pre mixed the mango and orango juice into this cute glass jar from Target. Then, you could add as much or as little champagne as you wanted when you poured your own glass.
